Singapore Sting
The first of The Devotea gin teas to return.
Reminiscent of balmy evenings, people watching, tropical rain, and all the time in the world; our Singapore Sting is both refreshing and a great little colour-changing party trick.
Inspired by the famous cocktail of similar name. While the men in turn of the 20th century Singapore could sit around sipping gin or whisky while watching the world, it was considered unseemly for ladies to imbibe in public. One savvy bartender developed a drink infused with clear alcohol but looked like a glass of juice for his female patrons to enjoy without tarnishing their reputations.
With this tea you pour gin over a scoop of tea in the place of hot water. Steep for as long as possible, or at least until the liquid turns bright blue. To stay blue, serve with soda water. Top with tonic for a magical transition to pink.
